Olympics offer ‘endless opportunities’ Entrepreneurship: Workshop delivers message – you don’t have to be big to benefit by Wendy McLellan
“…. Susan Mendelson, owner of the Lazy Gourmet catering company in Vancouver, said she hopes to work with Games sponsors to provide catering at events. Today I see the endless opportunities and it’s so exciting, said Mendelson, whose company has catered the Molson Indy for a decade and produced an official cookbook for Expo 86. I really see the great opportunity to go to the next level. It’s always exciting to grow and to partner with great corporations.”

The Genesis:
A Flight to Vancouver with the Olympic Flag - February 2006
It is said that there are defining moments or events in our lives that determine our next steps; Susan Mendelson, President of the Lazy Gourmet, had one such experience on a flight coming home from Europe to Vancouver. Susan found herself on a flight with the Vancouver entourage returning from the 2006 Olympic Winter Games closing ceremonies, she was enveloped in the awe and wonder of the symbols and personalities surrounding the games that her home city would be hosting in four short years.
The Olympic Flag that had been passed to Vancouver Mayor, Sam Sullivan, at the closing ceremonies, was personified to celebrity status, during this flight. The passengers reverently and proudly admired it as they discussed its symbolism, and, what the games would mean for Vancouver, and for the country. On this same flight, Susan received her first official Olympic pin, given to her by a member of the Vancouver Organizing Committee. She speaks of how privileged and thrilled she felt as it was handed to her with such enthusiasm for the task ahead. There was a considerable amount of emotion associated with what these symbols mean, and how they would represent Vancouver to the world. It not only was a vision of the future, but, also created a flood of past memories for Susan, and her beloved Vancouver: the 28 years she had spent nurturing her catering business, the Lazy Gourmet, all the people she had employed over the years, the accolades and gracious press she garnered for her innovative and unique contributions to Vancouver’s food world, her time on CBC radio, her ten published cookbooks , her philanthropic community work with Jewish Family Services and Big Sisters of Vancouver, the VIP catering contract with the Vancouver Molson Indy, and of course, Expo 86 where she created the official cookbook.
She was transformed by this flight, and her thoughts led to how she would continue to contribute in Vancouver, and, how her company would proudly be a part of the future of these Olympic symbols, the flag and the Illanaq pin. This flight, this defining event, marked the beginning of Susan Mendelson and the Lazy Gourmet’s catering road to 2010.
