Turkey, Bacon, Avocado Sandwich
Ingredients
4 slices cinnamon raisin wheat bread
6 slices turkey breast or turkey slices from the deli
4 slices bacon, cooked
1 each avocado
4 leaf lettuce fillets
1 slice red onion, very thinly sliced
Butter, to spread
Method
Place bread slices on cutting broad. Spread butter on all four slices of the bread. Slice avocado and divide on two slices of bread. Top the avocado with two slices of bacon and 3 slices of turkey. Divide the onion between the two sandwiches, if using. Top with lettuce. Place bread slice on top. Enjoy.
Makes 2.
Chef Jenny’s tip: Cinnamon and raisins balance the salty and buttery taste of the filling. No tomatoes for sandwiches unless eaten right away — as they’ll make it soggy.

Roasted Apple and White Cheddar Sandwich
Ingredients
2 croissants, halved (can also use ciabatta bread)
4 Granny Smith apples, cut into slices
2 avocado
2 slices white cheddar
1/2 cup baby spinach
Butter, to spread
Method
Toss apple slices with oil, salt and pepper. Place on parchment-lined baking pan. Roast at 350-degrees F for 10 to 12 minutes.
Butter bread slices. Cut avocado into slices and divide between two slices of bread. Top with roasted apples, white cheddar slices and spinach. Top with bread.
Makes 2.
Chef Jenny’s tip: Roasting prevents the apples from turning brown. The cheese balances the sweetness of the bread. Don’t add tomatoes to the sandwiches unless they’re going to be eaten right away as it’ll make them soggy. Both sandwiches can be toasted first.
