Mushroom recipes are becoming a popular comfort food favourite during the cold winter months – but are refreshingly healthy! Just in time for Lunar New Year, Chef Jenny shares her recipe for Stir Fried Tofu Batons – try it this Meatless Monday.

INGREDIENTS

1 package (200 g) of beancurd sticks (soak with cold water overnight)
2 packages of brown Shemiji mushrooms
1 package of Enoki mushrooms
12 Shitake mushrooms, stems removed and sliced
4 King oyster mushrooms, cut into 1/4
2 stalks of leeks, white only, thinly sliced
1 tsp minced ginger
1 tsp minced garlic

Sauce
2 tbsp Sambal Oelek
1 tbsp light soy sauce
1 tbsp sugar
2 tbsp soy sauce paste

METHOD

Sauce
Whisk all the ingredients together. Set aside.

Stir-Fried Tofu Batons
Drain beancurd sticks. Set aside.
In each pan, add 1⁄2 tsp of each ginger and garlic. Sauté.
In one pan, add leeks and sauté until translucent. Add all the mushrooms and cook until brown. Add half the sauce and stir. Turn off heat.
In other sauté pan, add the beancurd sticks. Sauté until tender, about 10 minutes. Add the rest of the sauce and stir. Place on plate. Place mushroom on top. Serve immediately.
